This salmon sushi roll is inspired by my grandma’s fish egg rolls, which combine fish paste on an egg omelette, which are then rolled up and steamed. They are delicious! This is my modern twist on the dish and they are really versatile so you can try filling them with tuna or chicken along with your favourite herbs and spices.

Ingredients
Egg omelette
Salmon filling
Servings: pieces (serves 2)
Instructions
  1. Heat a large pan on medium heat and pour in oil.
  2. In a large bowl or jug whisk together eggs, cornflour, salt and pepper. Whisk until cornflour is mixed through with no or few lumps.
  3. When oil has heated, tilt pan to spread oil across pan and turn down heat to low temperature.
  4. Pour egg mixture into pan and quickly lift and tilt pan in all directions to evenly spread mixture.
  5. Cook omelette until it has cooked right through (around 5 minutes). Transfer cooked omelette to a paper towel lined plate to cool.
  6. In a bowl mix together all salmon filling ingredients (look out for and remove any remaining large bones).
  7. Once omelette is cool, remove paper towel and use spoon to spread an even layer of salmon mixture over one side of omelette. Spread right out to edges. Gently push mixture down into omelette while you spread.
  8. Once omelette is evenly coated and the salmon mixture looks compact, use both hands to start to roll omelette from one side. Gently push down with palms as you continue to roll so that the roll is tight and compact.
  9. Gently turn over the egg roll so that last rolled edge is face down on plate.
  10. Refrigerate for at least 10 minutes before cutting into 1 inch pieces. Enjoy!
