If you live in NZ you can find chia seeds in the bulk bins at your supermarket.  I topped my peach chia pudding with extra peach slices and linseeds. You can top it with your favourite fresh fruit, sliced almonds, muesli, seeds or if eating as a dessert try grated dark chocolate.

  1. Cut peaches into pieces and blend all ingredients EXCEPT chia seeds in a blender until smooth.
  2. Once mixture is blended stir in chia seeds to combine.
  3. Pour into a your chosen serving bowl and refrigerate for at least 4 hours. Make the night before so you can wake up to a healthy chia seed pudding for breakfast!
  4. Top it with your favourite fresh fruit, sliced almonds, muesli, seeds or if eating as a dessert try grated dark chocolate.
