I love this salty and sweet combination, and as you can probably tell I have a sweet-tooth, so I’m often trying to make healthier desserts that won’t be disappointing and will be just as satisfying as their sugar laden counterparts. After experimenting I have developed this no bake chocolate salted caramel pie! Rich, creamy, salty and sweet – it’s so good and it’s not bad for you either!

This no bake chocolate salted caramel pie will satisfy any foodies dessert appetite. It will be the eye candy at any dinner party, the show stopper at any family celebration and your friends will be super impressed by your ability to make such a delicious dessert! I know I’m hyping it up but it really is that good.

The best thing is this no bake chocolate salted caramel pie is gluten-free, dairy free, vegan and contains no refined sugar, so you can cater to any special dietary requirements (extra friend brownie points).  You will be marching your taste buds to happy land in no time.

The 4 ingredient base combines nuts, raw cacao / cocoa, dates and coconut oil and the result provides stiff competition for any chocolate biscuit pie base. The caramel filling is made from dates and cashews, which gives the pie its sweetness. The rich chocolate mousse cuts through the sweet caramel giving the dessert a decadent flavour. The mousse actually makes a great dessert on it’s own – avocado and coconut cream give it a thick creamy texture, which makes it hard to believe it’s dairy free.

The pie is pretty rich so a small slice is enough to satisfy. Sprinkle sea salt on top before serving for an added salty crunch. Great thing is it can be made in advance and stored in the freezer for up to a month – just thaw for 30 minutes before serving. You could also freeze for an hour then take it out, cut into slices and return to freezer. This will give you individual servings that can easily be taken out and eaten as needed (it’s hard to cut into once totally frozen).

Ingredients

Chocolate Mousse

Instructions
  1. Put cashews and 1 cup of dates (for caramel filling) into a bowl and pour boiled water over them until just covered - soak for 30 minutes
  2. While they are soaking get your base ready. Line the bottom of a 20-22cm pie tin with baking paper. Put all base ingredients into a food processor and blend until the mixture starts sticking together. Scrape down sides as necessary.
  3. Remove base dough and using your fingers and palm push the base into the pie tin. Start from the centre and work your way out until the pie base covers bottom and sides. Put aside in fridge to set.
  4. Salted caramel filling: Drain cashew and dates that have been soaking. Place in food processor with remaining caramel ingredients and pulse until a smooth consistency forms. Stop and scrape sides down as necessary. Taste and add more salt if desired.
  5. Evenly spread caramel mixture onto base and place back into fridge.
  6. Chocolate mousse layer: Open can of chilled coconut cream, carefully scoop out the solid cream that has set in can and place into clean food processor bowl, put remaining liquid into fridge (can be used for something else). Place remaining chocolate mousse ingredients into food processor and blend until combined and smooth.
  7. Taste mousse and add more honey or maple syrup if you want it sweeter or more raw cacao / cocoa powder for a stronger mousse. Remember the caramel is sweet so you don't want this to be too sweet.
  8. Spoon chocolate mousse over salted caramel layer, careful not to mix the two, and spread mousse out to the edges of the pie.
  9. Cover the pie with cling film / plastic wrap and place in freezer for at least 2 hours. If it is too hard to cut, let it defrost for 15 -30 minutes before serving. Cut into slices and sprinkle salt on top before serving.
  10. Can be made in advance and stored in a container in the freezer for up to a month - just thaw for 30 mins before serving. TIP: You could also freeze the pie for an hour then take it out and cut into portions and return to freezer, this will give you individual servings that can be easily taken out and eaten as needed (it's hard to cut once totally frozen).
