I love this salty and sweet combination, and as you can probably tell I have a sweet-tooth, so I’m often trying to make healthier desserts that won’t be disappointing and will be just as satisfying as their sugar laden counterparts. After experimenting I have developed this no bake chocolate salted caramel pie! Rich, creamy, salty and sweet – it’s so good and it’s not bad for you either!
This no bake chocolate salted caramel pie will satisfy any foodies dessert appetite. It will be the eye candy at any dinner party, the show stopper at any family celebration and your friends will be super impressed by your ability to make such a delicious dessert! I know I’m hyping it up but it really is that good.
The best thing is this no bake chocolate salted caramel pie is gluten-free, dairy free, vegan and contains no refined sugar, so you can cater to any special dietary requirements (extra friend brownie points). You will be marching your taste buds to happy land in no time.
The 4 ingredient base combines nuts, raw cacao / cocoa, dates and coconut oil and the result provides stiff competition for any chocolate biscuit pie base. The caramel filling is made from dates and cashews, which gives the pie its sweetness. The rich chocolate mousse cuts through the sweet caramel giving the dessert a decadent flavour. The mousse actually makes a great dessert on it’s own – avocado and coconut cream give it a thick creamy texture, which makes it hard to believe it’s dairy free.
The pie is pretty rich so a small slice is enough to satisfy. Sprinkle sea salt on top before serving for an added salty crunch. Great thing is it can be made in advance and stored in the freezer for up to a month – just thaw for 30 minutes before serving. You could also freeze for an hour then take it out, cut into slices and return to freezer. This will give you individual servings that can easily be taken out and eaten as needed (it’s hard to cut into once totally frozen).
