When I think of broccoli salad I think of broccoli thickly coated in ranch style sauce topped with cheese and a lot of bacon. Broccoli salad recipes often contain bacon and although the flavours do work really well together it means vegetarians can’t eat it and it can be heavy and unhealthy. I have chosen to keep this salad meat free so that it can be enjoyed by all, but I have included smoked paprika walnuts and pepitas. These give a subtle smokey BBQ flavour and saltiness that steps in where bacon has been left out.

Cranberries add needed sweetness to this broccoli cauliflower salad and they really balance out the flavours. Instructions
  1. Place two pots of salted water on the boil. Cut broccoli and cauliflower into small bite sized pieces. Blanch broccoli and cauliflower by placing into boiling water for one minute, strain and rinse with cold water to stop them cooking.
  2. Spread broccoli and cauliflower out onto paper towels or onto a clean tea towel to cool and dry.
  3. Toast walnut pieces, pepitas (pumpkin seeds), smoked paprika, salt and pepper in a dry pan on medium heat. Toast for a few minutes stiring constantly. Once slightly browned take off heat and put aside.
  4. In a mixing bowl combine all dressing ingredients using a whisk.
  5. Place cooled broccoli and cauliflower, toasted walnuts and pepitas, cranberries and dressing into a large bowl. Toss to combine, season with salt and pepper if desired, and serve.
  6. Options: Add feta or grilled bacon.
