This broccoli cauliflower salad will have you merrily eating your veggies. It combines broccoli and cauliflower with smoked paprika flavoured walnuts and pepitas (pumpkin seeds), dried cranberries, and a savoury salad dressing – the result is a fresh and crunchy salad.
When I think of broccoli salad I think of broccoli thickly coated in ranch style sauce topped with cheese and a lot of bacon. Broccoli salad recipes often contain bacon and although the flavours do work really well together it means vegetarians can’t eat it and it can be heavy and unhealthy. I have chosen to keep this salad meat free so that it can be enjoyed by all, but I have included smoked paprika walnuts and pepitas. These give a subtle smokey BBQ flavour and saltiness that steps in where bacon has been left out.
Cranberries add needed sweetness to this broccoli cauliflower salad and they really balance out the flavours. If you do want to add some meat then you could add a bit of grilled bacon cut into small pieces or you could add a little feta as its creaminess would work really well with the salads flavours and textures.
