Containing only five ingredients these sweet and fluffy blueberry banana pancakes will kick that sweet craving while also fueling you with protein and energy. You can use fresh or frozen blueberries, which makes them a great treat year round. Perfect for a weekend brunch or holiday breakfast!
They contain coconut flour and ground almonds / meal, which creates a light texture. Coconut flour is high in fibre and protein so it makes a healthy alternative to other gluten-free flours. You can buy coconut flour at your supermarket or at health food stores such as Commonsense Organics, which sells it in a bulk bin so you can buy as much or as little as you need.
Simply whiz all of the blueberry banana pancakes’ ingredients in a food processor or blender, stir in the blueberries, and cook the mixture in a hot pan. You get light fluffy blueberry banana pancakes that are actually good for you! If you do want syrup, try natural maple syrup or gently melt 3 Tbsp of raw honey with 1 Tbsp Blackstrap Molasses in a small pot. For a healthier option just serve with fresh fruit. I made small pancakes and stacked them up but you could make big ones and roll them around fresh fruit. Dig in!
