Ingredients
Servings: people (about 8 small pancakes)
Instructions
  1. Place all pancake ingredients EXCEPT blueberries into food processor or blender, pulse to combine (about 1 minute). Mixture should be thick but pourable. Once combined stir blueberries through mixture. Put aside.
  2. Heat large non-stick pan on medium heat. Melt small amount of butter or coconut oil into pan. Tilt so it spreads across pan.
  3. Once the butter or oil has melted and starts to sizzle turn down to low-medium heat and pour in pancake batter in desired size.
  4. Cook for about 3-4 minutes on one side ( gently lift edge to make sure it's not burning). Flip pancake and cook other side.
