Instructions
  1. Preheat oven to 170C fan bake (180C non fan, 356F)
  2. Rinse asparagus and cut hard ends off stalks (about the last inch)
  3. Drizzle a little olive oil onto a baking tray. Place asparagus stalks onto tray, roll into oil and season with salt and pepper
  4. Take rasher of bacon (or cut it in half length ways to use less bacon). Hold asparagus stalk in hand and start to wrap bacon around stalk. Start just below asparagus tip and finish at bottom of stalk. You can wrap bacon around twice at the very start to make sure it is tucked in properly - this will stop it from unravelling.
  5. Place bacon wrapped asparagus back onto tray with bacon strip end face down.
  6. Continue to wrap until all stalks are covered.
  7. Use a pastry brush or fingers to brush cranberry sauce onto top side of bacon wrapped asparagus, concentrating on coating bacon. Season with a little salt and pepper if desired.
  8. Place tray into oven and bake for 20-25 minutes. Turn once half way and glaze other side with more cranberry sauce if desired. If asparagus tips look a bit crispy at halfway point you can cover this side of tray with tinfoil / aluminum foil so tips are just covered.
  9. Serve warm or cold with extra cranberry sauce for dipping. Store in fridge once cooled.
